Jet lag sucks. At 12pm today, I already felt the need to go to sleep. But if I slept, then I’d probably wake up at 6. Eat dinner, then not be able to sleep until 3 or 4 am. Nope. Normally, it takes me two weeks to get readjusted to the american time zone, but I unfortunately don’t have the luxury of two weeks. My sisters from college are coming tomorrow and I want to be awake when we hang out haha. Soo…the only thing I could do was fight the craving to crawl into bed and keep myself occupied instead.
I decided to make pizza to keep me awake because for lunch, we had the chinese “pizza” called da bing. Its not a pizza but my grandma said it was so…ok haha and I decided take a jab at homemade pizza. I found a nice lookin recipe for the crust, and looked inside the fridge and pulled out anything I saw that might be good as a topping.
The crust recipe I used was actually one where the dough is infused with garlic and basil, making it a garlic and basil bread pizza crust. I thought it was pretty cool and wanted to give it a try.
After I made the dough, I went to my fridge and found some honeyed ham, yellow onion, avocado, green onion, mozzarella, dill, and pulled out some canned corn from the pantry closet. Chopped them all up and set them aside. I glazed the crust with butter infused garlic, then frosted the dough with the pizza toppings. In the past, I’ve seen some pizzas with a random egg on top and thought I should give it a try. I cracked an egg into the center, and moved the pizza onto the pizza stone hot and ready in the oven.
Twenty-five minutes later, they were ready to eat! So glad I tried this crust recipe. The garlic and basil work beautifully together and the butter glaze gives it an extra sweetness. The crust is nice and fluffy while there is still a subtle crunch of the crust on the bottom. The egg is fabulous on top with it being a slight bit runny, just the way I like it. If raw egg doesn’t suit you, then you can just bake it 5 minutes longer and the yolk will be cooked through. From start to finish, this recipe took 3 1/2 hours to complete as the dough needed a lot of time to rise and rest. Now that it is past dinner time, it’s finally time to give into the jet lag and sleep. Good night!
Avocado + Ham + Egg Pizza with Garlic Bread Pizza Crust
makes two individual sized pizzas
For the crust, follow this recipe from How Sweet It Is
For everything else:
2 Tbsp semolina flour
5 Tbsp melted butter
6 garlic cloves, minced
2 low moisture mozzarella string cheese sticks, finely grated
1/4 yellow onion, chopped
1/4 can of corn
6 slices of ham
1/4 c chopped green onion
2 Tbsp. dill
Follow the directions in the link for the dough. Preheat oven to 400 degrees, and place a pizza stone in the center. Take a piece of parchment paper and sprinkle semolina flour on it. Take the dough and shape into a pizza. Mix together the melted butter and garlic and spread over the dough. After the dough has been glazed over, spread the toppings evenly between the two pizza doughs. Take the eggs and crack one per pizza. Transfer it onto the pizza stone in the oven and bake for 20-25 min, depending how cooked you want the egg to be.
